A popular Middle Eastern breakfast dish made with poached eggs in a rich, spiced tomato sauce with peppers and onions. Great with warm crusty bread.

Shakshuka

Ingredients

  • 2 tablespoons Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 400 g Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Chili flakes
  • 4 Eggs
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Crusty bread

Preparation Steps

  1. Heat olive oil in a pan and sauté the onions, garlic, and bell peppers until softened.
  2. Add the diced tomatoes, tomato paste, and spices (paprika, cumin, and chili flakes). Simmer for 10 minutes.
  3. Make small wells in the sauce and crack eggs into them.
  4. Cover the pan and cook until the eggs are set (about 5-7 minutes).
  5. Garnish with fresh parsley and serve with warm bread.
