A popular Middle Eastern breakfast dish made with poached eggs in a rich, spiced tomato sauce with peppers and onions. Great with warm crusty bread.
Ingredients
- 2 tablespoons Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 400 g Diced tomatoes
- 2 tablespoons Tomato paste
- 1 teaspoon Paprika
- 1 teaspoon Ground cumin
- 1/2 teaspoon Chili flakes
- 4 Eggs
- Fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread
Preparation Steps
- Heat olive oil in a pan and sauté the onions, garlic, and bell peppers until softened.
- Add the diced tomatoes, tomato paste, and spices (paprika, cumin, and chili flakes). Simmer for 10 minutes.
- Make small wells in the sauce and crack eggs into them.
- Cover the pan and cook until the eggs are set (about 5-7 minutes).
- Garnish with fresh parsley and serve with warm bread.
